I love this -- I'm not even sure you can really call it a recipe, it's so easy. But it's brilliant for a busy day.

1. Take four chicken thighs, bone-in, and remove the skin. Rinse and dry.

2. Marinate thighs overnight in a mixture of oil, vinegar, dried oregano, parsley, thyme, black pepper, lemon zest, a little brown sugar, and, um, whatever else strikes your fancy because I don't remember what I threw in there this time. Or, you could just use a basic Italian salad dressing, if you're pressed for time and creativity.

3. Place the marinated thighs bone-down on a baking dish, add salt and pepper to preference.

4. Cover each thigh with strips of red pepper. Toss extra strips of pepper in to bake alongside, if you want.

5. Bake at 400 degrees for about an hour.

Serve with rice or couscous and a green salad. Serves 2.

Is yummy. And takes minimal effort, which is good when head is very much in book, not kitchen.
